Meet The Bloody Orange, a washed Castillo Caturra from Finca Las Flores in Pitalito, Huila, Colombia, grown at 1,750 masl by producer Jhoan Vergara. This is a refreshing, zesty cup bursting with vivid orange peel and pulp, balanced by a clean, syrupy body and a tangy, sparkling finish that lingers like fresh-squeezed citrus.
Finca Las Flores has been in the Vergara family for more than 30 years, founded by Edilberto Vergara and Nubia Ayure. Since Nubia's passing in 2012, their sons Johan and Diego have carried the farm forward, becoming a benchmark for excellence in southern Huila and a source for some of Colombia's most remarkable varietals, including Java, Tabi, Red Bourbon, Maracaturra, Pink Bourbon, Gesha, and Caturra Chiroso. Johan leads experimentation in fermentation and processing, while Diego oversees production, drying, and quality control, together shaping a coffee that reflects everything Las Flores does best.
That signature citrus character comes from a carefully engineered process. Cherries are hand-picked at full ripeness (22–26°Bx) and cold-water floated to select only the best fruit. They then undergo 36 hours of anaerobic fermentation in cherry, 12 hours of oxidation, and a further 36 hours of anaerobic fermentation after pulping. A post-pulping thermal shock of 50°C for 30 minutes locks in the flavor profile before 36 hours of mechanical drying finishes the lot. The result is a bright, juicy, endlessly refreshing coffee that lives up to its name.
