Origin & Farm
Guarumo Farm in the highlands of Chiriquí (Panama) benefits from a cool, cloudy microclimate that slows coffee cherry maturation, improving quality. Volcanic, nutrient-rich soils and dense shade trees support healthy plant growth and biodiversity. The farm also experiments with advanced cultivation techniques to optimize coffee quality in small, carefully managed batches.
Processing Method (Natural)
Only perfectly ripe cherries are selected. Coffee is dried in two stages:
Controlled airflow drying (8–10 days): Prevents defects and ensures even drying.
Dark room stabilization (4–5 days): Slows moisture reduction for consistency.
Result in the Cup
Clean, fruit-forward coffee with clear sweetness, bright acidity, and well-defined flavors—without the heavy or overly fermented notes typical of poorly processed naturals.
